●OSASHIMI NO CHAINI-ZU FU- Chinese-style Sashimi

         

         <Ingredients(for four)>
         300g sea bream or adult yellowtail fillet
         1 spring onion
         1 cucumber (think slices of 4 to 5 cm in length)
         Chinese parsley(cut into bite size pieces)    
         2 tablespoons peanuts (minced)
         5 wantan wraps
         oil for frying
         Seasoning sauce:
                1/4 cup black vinegar
              (grilled shiitake mushroom or sea kelp grounded and mixed with vinegar)
               1/4 cup soy sauce
               1 tablespoon sesame oil
               1/2 tablespoon 'toubanjan' (Chinese miso paste)
         1/2 clove garlic(grated)
         1 tablespoon 'raochu'(Chinese sake)
         1/3 of a whole spring onion (minced)


          1)Cut the spring onion into 4 to 5 cm length, make a lengthwise cut until
           the knife reaches the core, and unwrap the layers. Then after discarding the
           slim core, make julienne strips. Submerge the thin strips in water.
          2)Cut the wanton wraps into small this rectangles and fry it in 165 degrees
           Celsius frying oil. When it adopts a light brown color take it out of the oil.
          3)Make a Chinese style dressing by mixing all the ingredients listed under
           seasoning sauce.
          4)Remove the skin from the fish and cut the fish into sashimi.
          5)After eliminating most water droplets from the julienne strips, spread it on
           the plate. On top of it lay the sashimi and garnish with cucumber, wanton
           wraps, Chinese parsley and peanuts.
          6)Pour the dressing, lightly mix and serve.
